It's getting cold outside.
Brrrr.
And there even has been some sn--,
nope, I can't even type the word. Ikk.
Nights like these call for nice and warm,
generous helpings of comfort food.
And this recipe I shall share with you is among my
favorite comfort foods.
With a portion sans cheese for my little lactose intolerant fella.
"Hot dish"
Ingredients:
1 lb ground beef, browned and drained
1/2 lb pasta {usually macaroni, but whole wheat penne used this week was just as tasty}
1 bag frozen mixed vegetables
3 cans tomato soup {secret ingredient!}
shredded mozzarella to top
-Preheat oven to 375
-Mix everything together in 13 x 9 casserole dish
-Top with shredded cheese
-Bake until cheese is melted and browned {or approx. 30 mins}
-Salt and pepper to taste.
